14 years late to answer the riddle but it hurt my brain for 2 days so I'll post my solution anyway:
The key here is that the two "when …" are convoluted ways of saying "in 3 days" and "3 days ago".
1st when
the day after tomorrow = 2 days forward, when 2 days forward is yesterday = 3 days forward
2nd when
the day before yesterday = 2 days backward, when 2 days backward was tomorrow = 3 days backward
Now we can simplify the riddle to:
in 3 days, today will be as far from wednesday as today was from wednesday 3 days ago. What is the day after this day?
and substituting the "today"s with actual days, 3 days from wednesday = saturday, 3 days before wednesday = sunday, we further simplify to:
saturday will be as far from wednesday as sunday was from wednesday. What is the day after this day?
Now there's the question of what day is "this day". If my english doesn't fail me the subject of this sentence is saturday, so the day after is our final answer, sunday.
The second "when …" is kind of redundant because to find "this day" we only needed to know how far it is from wednesday, and we got that from the first "when …", but at least it confirms that the distance we're looking for is 3.
