You don't need sedation to castrate livestock. It is typically done throw away called banding. This involves tying a rubber band around the testicles. It cuts off the circulation and the balls fall off after a few days or weeks.
It is completely painless. It might pinch a little bit at first, but very soon the area becomes numb.

2:00 – I was reading Ozzy Osbourne's autobiography and this was his job at 15. One time he had to "stun" the cow 4 times, it was fighting for its life with its brains hanging out. He threw up at least once an hour for 4 weeks, until he became desensitised.
